Christmas Cookies


Ingredients:

  • 3 cups all-purpose white flour
  • 3–4 tbsp ground coriander seed
  • 3/4 cup cold unsalted butter, cut into chunks
  • 11/4 cups sugar
  • 3/4 tsp baking soda
  • About 1/3 cup whole or low-fat milk

Directions:

  1. Preheat the oven to 325 degrees F.
  2. Grease several baking sheets or coat with nonstick spray.
  3. In a large bowl, thoroughly stir together the flour and coriander.
  4. Using forks, a pastry blender, or your fingertips, mix the butter and sugar into the flour until the mixture is the consistency of coarse meal.
  5. In a small cup, thoroughly stir the baking soda into 1/3 cup milk.
  6. Stir the milk mixture into the dough, then, working in the bowl, knead in enough additional milk to yield a smooth but still stiff dough.
  7. Divide the dough in half.
  8. Roll out each portion 1/3 to 1/2 inch thick on a lightly floured work surface.
  9. Cut or stamp into any size you please.
  10. Using a spatula, transfer the cookies to the baking sheets, spacing about 1 inch apart.
  11. Bake the cookies for 18 to 23 minutes, or until just lightly browned at the
    edges.

Makes 30 to 35 cookies.
