
Christmas Cookies
Ingredients:
- 3 cups all-purpose white flour
- 3–4 tbsp ground coriander seed
- 3/4 cup cold unsalted butter, cut into chunks
- 11/4 cups sugar
- 3/4 tsp baking soda
- About 1/3 cup whole or low-fat milk
Directions:
- Preheat the oven to 325 degrees F.
- Grease several baking sheets or coat with nonstick spray.
- In a large bowl, thoroughly stir together the flour and coriander.
- Using forks, a pastry blender, or your fingertips, mix the butter and sugar into the flour until the mixture is the consistency of coarse meal.
- In a small cup, thoroughly stir the baking soda into 1/3 cup milk.
- Stir the milk mixture into the dough, then, working in the bowl, knead in enough additional milk to yield a smooth but still stiff dough.
- Divide the dough in half.
- Roll out each portion 1/3 to 1/2 inch thick on a lightly floured work surface.
- Cut or stamp into any size you please.
- Using a spatula, transfer the cookies to the baking sheets, spacing about 1 inch apart.
- Bake the cookies for 18 to 23 minutes, or until just lightly browned at the
edges.
Makes 30 to 35 cookies.
